Alright Friends,
It's another snowy Monday here in Maryland and I'm stuck inside with the cat instead of at work. Perfect chance for a blog update! It's been quite the rollercoaster week personally and diet wise. I'm glad this week is over and we're on the downhill side of this diet (I'm sure my boyfriend is too after the meltdown I had about him eating potato chips in front of me...)
Let's start with the bad news for the week, and then end on a positive note. I'll call the bad news "less successful" events than labeling them "failures" (trying to keep positive.)

I'm glad this week is over and we're on the downhill side of this diet (I'm sure my boyfriend is too after the meltdown I had about him eating potato chips in front of me...)
Let's start with the bad news for the week, and then end on a positive note. I'll call the bad news "less successful" events than labeling them "failures" (trying to keep positive.)
- Less successful event #1: Trying a Clean Eating Pumpkin Oatmeal recipe that I found on Pinterest.
I thought this sounded like a great Phase 3 dinner that easily encompassed all the elements in one dish. Here's the recipe:
I didn't have pecans, so I substituted crushed raw almonds, and then added chia as a healthy fat boost.
My one word review on this recipe? Blech. Such a disappointment. Even with added stevia as a sweetener. The texture was wrong, the bits of egg white floating around kinda grossed me out, and it just did not have enough pumpkin-y, warm goodness that I wanted. Try it yourself and let me know how to improve!!
This failure - SORRY - less than successful event on Friday night put me in a sour mood, which then led to the potato chip freakout.
I have, however, lost 5 inches around my waist, which I know is a success...but I'm a princess and am irritated that my hip measurements haven't moved. But, positivity always prevails, so wish me better luck this upcoming week 3. Here are my latest stats:

All in all, a difficult week and I'm glad it's over. I hope this week looks brighter, but right now, the stress of this snow day is killing me! Let's hope for sunny skies and a positive outcome to this week! Halfway there!
